2 slices of Hoxton sourdough bread
3 slices of honey-roasted gammon ham
4 slices of Emmental cheese
3 slices of gherkins
A few slices of spring onions
1 teaspoon of real mayonnaise
1/4 teaspoon of English mustard
A pinch of salt and pepper
Melted butter
Methods
Melt the butter.
In a bowl, mix the mayonnaise and mustard with the salt and pepper
Slice the gherkins.
Start by laying 2 slices of cheese on top of one slice of sourdough.
Spread half of the mustard mayonnaise mixture on top.
Sprinkle with the chopped spring onions.
Layer 2 slices of ham on top, followed by the remaining mustard mayonnaise mixture and the sliced gherkins.
Add a final slice of ham and then top with the last 2 slices of cheese.
On low heat, warm up your skillet or frying pan, then add the butter. Cook one side of the toastie gently until it is golden and crispy, then turn it over and cook the other side. It’s essential not to use high heat; otherwise, the outside will cook before the cheese has a chance to melt.
